How well does that really work though?
I mean the two units are battling each other? Then wouldn't the bottom always win?

No need for an incubator as long as your temps where you colonize are normal room temperature i.e. 70-77 degrees fahreheit.People keep forgetting that the internal temperature of the colonizing jars will be greater then the ambient temperature around the jars.

thats what i was thinking seem like two separate unit would be more efficient.

Both are blowing warm air set at 110F. Trays are not air tight, so it vents all over. Just the same as 2 fans blowing towards each other. The winning part is, it does the job quick. 10 lbs wet is well over a gallon of moisture you want gone. Also a foot print space saver, rather than 2 side by side.

I wonder if there is some back pressure resisting against the fan motors harming the longevity of the units?

Not enough back pressure to matter. I have run one like this off & on 10 years. All still work fine.

I might add, it doesnt take a cabinet maker or electrical wizard to build a 2X2X6 ft sized dehydrator.
2 sheets of chip board = $15 Some 1/2 inch X 1 inch boards = $10 Some 1/2 inch wire mesh hardware cloth = $25 A fan (garage sale = $5) A hvy duty light bulb base & extension cord cut off to make a plug in = $10. (wired to the light bulb base) Chick brooding bulb = $8 Hinges & door latch = $10
Skill saw, screws, screw gun, drill / hole bits & measuring tape. A couple hours of your time.
Mount the bulb base center inside on the bottom sheet. Mount fan to blow towards the bulb, with a 2 inch intake air hole behind the fan. Space racks as you want, screwed to slats on the side walls. 1 inch hole in the top as a vent.
For under $100 you can build one you yourself could squeeze into.
Simple as that
