Bulk substrate grow, question

So, this is my second attempt at spawning to a bulk substrate.
My last attempt kinda failed - I got ~200g fresh from it, but it looked pretty poor.
I'm crumbling up BRF cakes, spawning them to coir/verm (60/40)
This time I used tons more substrate (1 part spawn to 5 parts sub), before I used ~50/50
I was worried that might be over-kill, and it took quite some time to colonize, almost 3 weeks.
When it looked mostly covered in myc, I made some holes in the tub and started misting/fanning.
The pins seem to be coming along nicely, and there's a shit ton of them.

Compared to my last grow

I was wondering, since it seems to have taken a long time to colonize the bulk sub, is this going to hinder the final yield? Is there such a thing as too much, or is it just a trade off between how long you want to risk it getting contams, and how long you can be bothered to wait?
Did I use too much coir/verm mix, could I have saved some and got the same results?

I'd say it looks like it turned out well, so just do what you did again next time.
Colonization times and yield are unrelated.

Based on the pictures of the first grow I'd say the low yield was related to lack of fresh air and possibly lack of proper lightning.
For optimal results you need optimal conditions.
65f-75f for fruiting. Bright 6500k lightning on an approximate 12/12 on/off cycle. 3-5 fresh air exchanges per hour whole maintaining 80-95% humidity.
The long scrawny mushrooms with tiny caps are symptoms of poor light and fresh air. Humidity looks good but it's not as important as the other factors.

what are your thoughts on wiping the condensation from the fc's walls?

None really. There really shouldn't be condensation on the walls. It's caused by a temperature difference (cold window + hot breath for example) and if it's getting the proper amount of fresh air the temperature should be equalized.
Now with my automatic setup that injects fog, condensation wasn't much of an issue. Some moisture would build up then dry off between foggings.
