To case, or not to case my colonized poo? (Boy am I FRIED)

I don't know whether to case my fully colonized poo or not case for the 1st flush! You see this is only my first grow attempt... the first one with the Allen strain got all fucked up, but I managed to save some pure white mycelium and recase it (using my newfound knowledge thanks to the kind folks here at the Shroomery). Low and behold the fucker started to pin, I successfuly GREW mushies... the dried amount was a different story 0.3g's 
Anyways I hear of all sorts of things going wrong when casing like:
1... casing gets too dry this ones pretty easy to prevent, but adds a slight risk factor
2... ph could be off this one is slightly harder to prevent, but I bought premixed 50/50 coir mix from one of the vendors here so I think my PH will be right on, I'm still going to test it though!
3... patch it wrong/start pinning it before it's ready/wait too long - overlay This seems to me to be the hardest factor to casing! It doesn't seem really that hard, but still... I want to insure atleast one decent harvest from these colonized casings of poo 
I know just pinning it right off the poo is the most fool proof out of the two options (to case or not) but would I still get a decent first harvest? Then I was going to case for the 2nd flush.
So... what kind of harvest do you project for my situation, if I wasn't going to case!
I got 5 fully colonized tuppewares that are about 1 foot in length, 1/4 foot in width, and about 4 inches tall. My colonized poo layer is about 3 inches thick in each tuppeware!
How much of a difference would the first harvest be if I were to case it?

If cased properly you would yield alot more mush up to 3-4 times as much
