Just looking for some expert advice. What is the best way going about doing this. I plan on using 12 jars and I'm getting ready to soak my wbs overnight

That's what I'd recommend as well. However, whenever I do WBS I treat it like rye grain and rinse it several times before the soak until the water runs clear. Then after the soak I rinse it about two or three times again. Then I do the simmer -> drain/dry off -> sterilize.

I do it that way every time and I never have a problem with the kernals sticking together or anything, and it has the perfect hydration/texture/consistancy etc etc.

I strain and lay them out on a dish towel for 20 minutes. Or until they have zero water on the outside of them

I just pour them to a wide strainer made from a window frame and let them cool and evaporate excess moisture.

Wire strainer is way better than plastic. Go buy a couple if you need to, totally worth it.

I personally like Fooman's wbs tek. So much easier than all the soaking, rinsing, simmering, then rinsing. You only simmer for like half an hour then drain. Never had a problem with any contamination. And as for drying, I just put them in a big wire strainer until they are completely dry to the touch. This usually involves mixing them around a little bit while in the strainer to provide even draining.
