Ideal Way To Preasure Cook(beginner guide)

I was asked multiple times in chat today how to pc the right way as people have been having problems with wet bottom substrate in jars, breaking jars, burning bottoms and more. So heres a noobie guide to preasure cooking(pc'n):

Its important to keep the jars off the bottom of the pc as this is where it is the hottest, a trivet is used for this. I didnt have a trivet with the first pc so I stacked up pint jar lids 3 deep from the bottom, then made a foil cover over that so the jars were on one surface. If you can keep water level below the jars that is ideal, you only need a couple inches of water in your pc. Allow the water to boil before adding the jars, this helps due to moisture in the jar. Load jars and lock lid,set to 15psi. Turn burner to high and wait. Steam coming out around the pc before this and very minor water driping is normal(if too much water comes out your pc either has a broken seal or the water level is too high). when this stops, the whistling starts along with the rocker, and thin streams of steam starts comin out. Start your timer and reduce heat to medium as long as pc still whistles and is rocking. The lower the temp the slower the water will evaporate meaning longer pc'n for smaller pc's and lowering risk of burning substrate, so set stove to lowest temp while maintaining preasure. After 60minutes(90 if you double stack many jars) turn of the heat and allow the pc to cool down on its own. If your pc only does 12psi then pc for 80-90min, 10psi 120min. DO NOT use the QRS(quick realease system) to depreasurize the pc, as that can cause air to suck into your jars introducing possible contams. Wait till pc depreasurizes then give it time to cool down a bit, open and remove jars. Allow jars to cool at least 8 hours before innoculating. happy trails.

no let ur jars cool 24 hours just cause the jars are cool dosent mean the middle of the substrate is...i would know lol I have tryed 10 hour cooling and still it was to hot for the spores.



Also some jars crack from cooling to fast its best to keep them in the PC "closed" and let the whole unit cool and the water for 24 hrs thats how i do it.
