if pressure cookers are used just because they get hotter than a normal pot of boiling water, then why not just stick them in a hot oven?

An Oven has dry heat...this will dry out your jars.

Sorry but this has got to be one of the dumbest questions I ever saw on here. LOL. No offense bro. Read The FAQ and do a search for oven tek on here. Its already been done. Pressure cookers are better since they do not dry out the substrate that you are trying to sterilize/pasturize. Baking stuff in the oven tends to dry things out causing you to have to rehydrate afterwards which could lead to contamination problems.

at normal pressure water boils at 100c, so water-containing substrates will not get appreciably above 100c even if the oven they are in is at 200c, except the bits that burn, until all the water has evaporated.
