Pressure cooker problem
    #12590864 - 05/19/10 08:37 AM (14 years, 7 months ago)

Pressure cooker was used last week to sterilize 5 jars and worked perfectly.  The heat was turned on high, and after about 15 minutes the rocker weight on top of the PC started to rock and the heat was reduced till it started rocking at a slow steady pace.  Today however the same procedure was followed and the rocker never started to shake even after it was on full blast for a long time about 30 minutes.  Some steam was coming out of the top where the lid joins the base, or in other words where it seals.  Do you think that the seal is broken or something?  The steam escaping through this place is making it so there's not enough pressure in the cooker to get thte rocker moving?  If this is the problem can it be solved by adding some silicone or anything else?  If jars were in there and pressure cooked for over an hour like this will it still be sterile or should I save the jars and fix the cooker then re-cook?  How many times can a PF jar be PC'd before they go bad i.e. from exposure to too much heat over time causing a change in the substrate?

PF jars can probably handle the heat easily.

Sounds like your PC might need a gasket though, assuming it uses one - check out your owner's manual for parts & ordering info. Some people have good luck just steaming PF jars but they aren't truly sterile.

Cool thx bro, I don't have a manual I luckily stumbled upon this one at a church that was having a garage sale type thing.  Picked it up for a mere quarter, 25 cents!  I cooked the jars like 3 different times to see if I could get the rocker going by having a certain amount of water in the cooker / other variables but I'm pretty sure the amount of water doesn't matter as long as there is enough to last through the hour.  So would it be safe to inoculate once cooled down even if there would put through heat like that (3 different times at about an hour each)?

Also, do you think they'd be sterile enough?

If you have a rubber gasket on it then strech it out a little bit, also coat it with a little vasiline in the future.

It is a smaller cooker, like 4-6 quart (it fits five 1/2 pint jars perfectly)  Need to get a 16 quart to start doing 12 hp jars at a time

As stated above, you should try lubricating your seal with vaseline or oil (mineral, for example, or cooking).  It's likely that you'll need to order a new seal - if not now then after a moderate amount of use.

The bad news is that the gasket will cost you many times what you paid for the PC.  The good news is that that will probably still only be 5 or 10 bucks.

The other bit of good news is that your jars are probably sufficiently steam-sterilized that you can go ahead and use them in the meantime.

Rice steamers and pressure cookers are not interchangeable.

If you're only going to steam things, you might as well save yourself the money and just use a cooking pot.
