if you did everything identically to all the cakes, yet only one is fruiting, the issue is with the mycelium. When you grow using multi spore inoculation, its like a gambling, you never know what the outcome will be. Now if you want to take your project further. Make a print from one of the mushrooms that are growing (providing they're healthy enough to produce a usable print). Then buy a few petri dishes and ingredients to make the agar mix, and save the fruit bearing strain, discard the others.

from the looks of it, the bottom left cake just looks to be a little more mature than the rest. All the rest of the cakes look like they're doing just fine to me - there's just not as many fruits, and they seem to be taking a bit longer. (i'd expect bigger fruits on the ones with fewer pins)
can't give an answer about the humidity, but based on the picture it looks fine - plus you say you fan after misting and between mists. Also, now is the time where gas exchange is most important, so fan as much as you want.

Don't worry, it’s not DDT, it’s “DDT-Lite!”

There is no such a thing as too much humidity. Patience is the key.
