fruiting a 3/4 colonised monotub

My monotub had been colonising for 10 days, when I checked it it was good, but the middle of the surface was hardly colonised,compared to the sides. (when I say the middle I mean the center of the top of the surface area, not deepness). A week later it was still the same so I waited a few more days, and have now decided to fruit it.
My concern is that Ive read that a not fully colonised sub, would not fruit.
Only when the sub is fully colonised, will it be able to fruit. Maybe the center didnt colonise well beacause of a different water content, as it seemed a liittle dry when I lifted off the foil to check (ten days in)but I lightly misted.
the sub is pure horse poo. no casing. first monotub.

No vermiculite?  It probably dried out.

Could be any number of things, one being pasteurizing procedure.Just make sure to follow your teks to the "t" when executing them. That way , there is no question if you did something wrong.
  Moisture content is a big one, in terms of trial/error, takes a few times to get it optimal in most cases.fruit it if there is no noticeable difference in growth. Just be sure to either remove the uncolonized portion, if not, watch that area closely.If you do remove the uncolonized spot, check for a sour odor, which would indicate bacterial bloom. Remember bacteria will be present in a bulk substrate, it is not considered a contaminate of bulk substrates, given you pasteurize correctly.

As said above, it would be much better if you used verm, for it's moisture retention capabilities.
also, did you provide gas exchange when colonizing, if so, what.

dont think its bacteria, but it smells just a little musty but nothing too bad. How much verm should I mix in next time? 20 % maybe?
I started to incubate at 28 celsius then realised bulk might get too warm so I lowered it to 25-26 celsius.
When I pasturised it did go slighlty higher than 70 celsius for about 5 minutes...oops! I think it would be difficult to remove the uncolonised portion acually. I did have a plastic over the top so it didnt dry out.
I had all holes taped up when colonising, and the tub had a lid although not air tight (I'm not sure actually)
