Dried Substrate?

Hey, I'm relatively new at this, just on my second batch of PF tek jars, and I've looked through all the FAQs on this site and others but can't seem to find what to actually look for to see if my substrate is drying during sterilization process.  I'm using a pressure canner to sterilize, not a pressure cooker with variable PSI, but at least the pot lid sits flush and the jars are reasonably raised off of the bottom.  In about 3 out of my 7 jars that are about to be inoculated I'm seeing a wierd pattern-- the dry level of vermiculite at the top is light and looks like all others, but then there is a dark, wet looking spot in the middle of the jar- just at the top level of the substrate. The bottom of the substrate is lighter and dryer looking.  Again this did not happen in all my jars but the incosistent look of these has me worried.  Is this a problem? if so should i just abandon those 3 jars and what can I do (other than buying a pressure cooker, which is definitely on my budget) to help prevent this in the future?
