So this is the first time I've cultivated my own mushrooms and these are the first ever fruit bodies I've produced. They look so awesome I can barely keep my eyes off them. Can't wait to try them out too!

Awwww how cute I still remember my first flush, checked it damn near every few hours lol!!!
Looking at the second picture it seems that there are some tiny ones destined to abort. (IIRC, aborts usually occur because their buddy's mature must faster than they do)
Also, it looks like you have some...umm...forget what it's called, but large patches of "overgrowth," i.e. hyphal knots that grew to fat, too hard, too tired, and just are useless. IIRC then you should, after harvesting, carefully remove those sections.
Your colony looks really nice and even too, good stuff bro you shouldn't need but a thin casing layer for the second flush.
Good luck, and keep us updated in this thread! (Remember, you can edit your first post and keep putting pictures in as they mature )

So when harvesting my first flush should I wait until every cap from each one opens up or just when the majority of them do?

The majority of them, actually, if you don't want to make spore prints you can wait until the 'veil' begins to tear (it's pretty easy to recognize, imagine a soft penis with the skin being pulled back and the head being pulled forward so it becomes erect length). Potency is highest just before this.
And pick them ALL, once the colony goes into this phase of the reproduction cycle, they all go.
And the tiniest ones will look pathetic, but they are the most potent and most toxin free. They are called 'aborts,' and their heads might rot black but thats ok just squeeze them off.
Do a search on harvesting, veil, and aborts.
GL!
