water infiltration bug...
    #12566534 - 05/15/10 09:26 AM (14 years, 8 months ago)

Hi folks!

for space reasons i must to lay my jars when putting them in pc...

well, where i live i can't find coffee filters or tyvek so i opted for pillow stuff to make filter...

i covered jars' top with two aluminium foils fixed with an elastic, but while cooking water comes in...

any ideas to fix it?

thanks to all

It's because the jars are on their side. Rotate them so they are standing up.

It's probably not coming in.  Jars will often appear wet after PC'ing but the grains will re-absorb the water after a good shake and some patience.

I highly doubt you don't have access to tyvek or similar material.  Any stores sell paint near you?  Where they sell paint they sell disposable tyvek paint suits (or similar brand).  Cut pieces off and use as needed.

Unless they're under the water this is unlikely.  My sterilizer holds 10 standing up and 5 on their side and I don't even bother with tin foil and my moisture content is fine.

When I first got started and noticed my wet looking jars after PC'ing I tried to fix it but learned pretty quickly that water will go be re-absorbed in a day or two.

How much water are you using in your pressure cooker?

1 inch is plenty.  If you're using the correct amount plus 2 layers of tinfoil with a rubberband I highly doubt you're getting any excess water in.

That stuff is not high enough quality to use as a microbial filter.  It's subpar at best.

The tyvek used in coveralls is sufficient and has data from testing to back it up.

Much of the world doesn't drink freshly brewed coffee.  Outside North America and Northwestern Europe, I think you're more likely to find people drinking Nescafe (instant)

Anyway coffee filters are useless as filters according to RR.

i just use them to cover the jars in the pc, and leave them on for dust covers.

They're fine as dust filters but nothing more.

That's normal for the filter to be wet after being steam sterilized, but it should dry out in a few minutes (don't leave the tinfoil on!!!) and be fine.

I've placed a sporeprint on a table with a coffee filter over it, and then looked at them through the lens of my stereo zoom microscope.  At least ten spores can be seen through each open weave of the coffee filter, so there's no way they make a proper filter for mycology.  If a coffee filter had the pore size necessary to stop mold spores, your coffee would overflow and run all over your kitchen counter top.  If you doubt this, just try using tyvek as a coffee filter and watch what happens when you brew a pot.

If laying jars on their side, make sure they're totally elevated out of the water.  If you can't do that, you'll have to get a larger pressure cooker.
