I've had the same question and the answer is as follows, one should harvest them right before the veil breaks, though this may not be true in all species but it's the common norm. The one's with the open veil are still usable, but I recommend using them for prints first, then eating/drying them. Hope this helps. Hope I'm not wrong.

Well, that I'm not sure. In my case, it's a matter of guessing, I've never had an exact period. Mine never follow a time rule, so I just guess.

Those are ready, IMO. By now I'm sure they are.
You let them flatten out a bit if your going to use them for printing. As I understand it, the mushroom cap looses potency after it drops it's spore load. I could be mistaken but that's what I've been told.
It's rare for all of the fruits to mature at exactly the same time. The only time I ever really let some of the fruits go longer then the others is when some of the larger fruits mature first I pick those and let the rest finish maturing. I usually pick them all at once, sometimes I even pick the aborts a day before hand.

You don't lose potency because spores drop. Yes, you can harvest after veil breaks. I pick 6 hours after its completely torn off. I don't want a mess in my mono,FC etc...

They look ready to me, if you're wanting to make prints to trade then wait until the veils break open and start to see the stipe turn dark purple with spore.
For maximum potency per gram pick them just before the veil breaks and dry them immediately.
Also, the small mushrooms/pins that don't seem to be growing are either the second flush or aborts.
Abort will have dark almost black caps and usually be blue on the stems.
If they are pins of the second flush just try not to pull them off if you can.

You should always re-dunk between flushes. That's the norm.

Congrats on your first harvest. I'm not entirely sure if you should dunk the cake as it is. Perhaps you should wait for some of the Pros to give you some advice.
