Newbie Some Advice needed if possible

Hello,
Kind of new around here I had a grow log started but didn't have much following and questions didn't get answered too much so I stopped the grow log and just went with it. I have included pictures of where my grow is at.
I have had mushroom for about 3 days now. I am growing blue meanies and am using a shot gun fruit chamber. I ran into some humidity issues that has caused me to cover up a very good amount of my holes on the shotgun chamber and it finally holds 99% for awhile.
My temperature and humidity fluctuate a lot. My temps are usually 68-80 and humidity is 90-99 but for most of the day I maintain 99% humidity and about 72 as a temp.
I'm concerned because these cakes started out great very fast and the mushrooms grew fast now it all has seemed to slow down. Also I have a lot of bruising that I can't figure out why it's happening. I mist about 6 - 10 times a day by holding a sprayer 1.5 feet about the cakes and mist into the air using a sweeping motion and letting the mist fall on the cakes. I then also spray all the walls of the FC and have to add water to the perlite periodically. I then wait 15 seconds and fan them for about 45 seconds.
Any ideas on why they have slowed in growth and why I'm getting so much bruising?

your blueing seems very strange....bad picture? Mold? try to wipe at the blueing with a paper towel, if it comes off at all its mold. It just seems the wrong color to me.

It's not mold I've tried the wiping thing and nothing comes off? Could it be the humidity always changing that causes them to bruise? I can't figure out what is going on it seems to work then it seems to not???

Ususally when I see bruising like that the first thing I think about is lack of water in the substrate.

I support this, drying of the cake with cause the bluing, and if you had humidity issues I would say they are quite thirsty

How big is your perlite layer? 4 inches is the suggested depth to keep things nice and humid in a SGFC. Also what is the humidity in your room? If it's below 30 that could be another factor in why your cakes are so blue from lack of moisture.

If they are quite thirsty what is the best way to to get moisture back in them. I did dunk them for 24 hours before I put them in the chamber and the vermiculite was from a fresh bag. I can't really dunk again obviously since there's shrooms so what is the best way to rehydrate the substrate. Also I have about only 2.5 inches of per lite so I can deffinitely add more but how should I go about storing the cakes as I put more per lite in where should I put them?

yea you want 4-5 inches of perlite. the cakes can be placed on a shelf for a short time while you put more perlite in.
Cakes can be dunked even with pins on them but not with full sized fruits. But if it is low in moisture place the cake in a saucer full of water overnight. Dunk it after your flush

Ok so I added the new layer of per lite in and hoping this will help out. So my question now is should I try to rehyrdate the cakes that don't have big fruits yet? If so should I rinse off all the vermiculite and just dunk for 24 hours then put back in?

oh so just leave them sit in a saucer full of water for the night and put them back in? I'm hoping that this will fix the problem. I'm not sure if I should dip them in water for tonight or just leave them in and see if anything happens. Wish there was an easier way to see if the cakes were too dry lol.

Pick them up and feel by weight. If they feel light then put them in a saucer of water overnight

I would pick the ones with the broken veils. Not to disagree with Shea, but spores taste like shit, and they fit in the dehydrator better.

shea would I also put the cakes that has the full fruits in a saucer or should I just let those continue on where they are. I have some fruits towards the bottom so I think it may contaminate those?
