old jars

story -
my grandma's best friend's bird pc'd 21 brf pint jars 3 weeks ago. the jars have been opened once to release the vacuum effect after pc'n. there are no contams in any jars. they plan on innoculating the jars within the next couple days but do not know if the jars are still viable.

questions -
can the jars still be used?
will it effect the colonization time?
will it effect the potency?
should the old jars be replaced?

well if you see no contams that doesn't mean there aren't any. The best thing to do is to pc them again. But don't open them afterward.

My advice would most definately be to re PC them, unless you opened them under a flowhood... or MAYBE using oven tek. Even then best bet to recook.... but first
1) Punch holes via pf tek
2) Flip the lids so that the rubber seals face up, this eliminating any chance of vacuum, also via pf tek
3) tape the lids to the bands. this is optional, but I like to do it.

Also make sure you cover the jars with tinfoil to prevent water from sneaking in the punched holes and/or the non sealed lids..... dont want a stewy mess of rice mush.
