The AC might be an issue, but I don't have the experience to say offhand. Try it out with no AC and see if that improves the situation.
Can't advise you on the monotub because I have no experience there. Do some research and see what you think will be easier for your situation. If you can't get the humidity in your shotgun setup to straighten out, you might look into some other fruiting options (but make sure you try all avenues with the shotgun first!)
As far as the 6 cakes you have now- ever thought of double-stacking?

This is what I plan to utilize for my next run (6 stacks of 2 in a shotgun FC). Just grab some metal (not wood-they'll rot) skewers, put a piece of foil between the 2 cakes and stack away. You should be able to fit 3 stacks of 2 in your current setup.

hmm I did not think of stacking. I have 4 jars I'm about to birth in the next few days ( two Mexican and two Treasure Chest ). I will look into the stacking method and see if it will benefit me. Thanks!

Alright, so this morning a lot of the lil ones had matured. Would you recommend that I harvest them today as I do not want any to begin to rot. Would appreciate any thoughts !

You ideally should pick when the veil begins to break. Those look ready to pick for sure.

Yeah normally I would have but these are very small and the veils broke before they were 1/2" lol. I will harvest and test out today. Will post results!!
