Want to try whole grain (rye). Where is a good place to start looking for gypsum. Also, what other things is it used for?

Gypsum is optional, not obligate.

I heard beer brewing supplies have it.

go to an art and craft store (Michaels) and get plaster of paris. same thing, cheap as hell. I got a lifetime supply for $2.50!

no, it's not required for grain but it has it's uses. when I fill my grain jars I let them sit for about five minutes and then hold them up and watch closely as I tilt the jar. I'm watching for any loose water that would work it's way over to the "gravitational corner" (admittedly my draining technique is perfected and I don't have to add gypsum much anymore). If you can see loose water in there then toss in some gypsum to hold it. after some practice you will learn how much gypsum to toss in for a given amount of loose water. however, if the loose water is excessive or all of your jars have loose water, you need to redrain them and learn how to drain better because that loose water can be real bad for your colonization.

i suggest reading the ingredients before buying. i got some plaster the other day to fix some stuff around the house and it also contained silica. silica is pretty inert but i'd rather not ingest it.
