Uber weird PE substrain or conditional mutants?

Ok so I went into my fungi fortress last night and spied on one of my fruiting monos, they're all 1 brick coir, 2qt verm, 1qt spent coffee, and 3 tbsp gypsum, I've been using 6 qts spawn due to prior frustration, the tubs colonize like fuggin lightning 4-5 days max, anyway, this is the first one actually fruiting using the 6 qts instead of 4.5-5qt, it took 3 days to hit 100% and I introduced it to fruiting conditions 6...yes 6, days ago, I have what looks like knots on steroids everywhere, the color of them all is that of a maturing stem but I can't see any distinct signs of caps on any of them, there's a good deal of metabolites and excess moisture on the top of the substrate so I've amped up my fae pretty significantly a couple hours ago, basically I'm just wondering if this could be circumstantial or did I just end up with poopy substrains this tub? Here's some pics, hopefully one will be clear enough to get an idea, and I've pretty much ruled out the big lump in the middle as just mutant growth, had plenty of those in the past. Thanks fellas

also any green tint you may see is just due to my neon green lids and the abundance of fluorescent light

Hrm I'll start using more gypsum then, I hadn't used it in previous years, went and got a 20lb bag for $3 2 weeks ago and I made a new best friend lol, my grains come out perfect everytime now so if I'm not up to par with the bulk sub gypsum I can't wait to make the next tub with the proper amount. Yeah I've had a lot of those lump mutants before but I've never seen anything like what's going on around it, really excited to see what happens, my 100% colonization to visible fruit time has been reduced to about 40% of what it used to be.
Thanks for the suggestion!
