Dryness problem
    #1230596 - 01/19/03 06:29 AM (21 years, 2 months ago)

I am having a problem with my jars after I PC. They seem to be really dry. Does pressure cooking evaporate a lot of the water in my jars? I use a 2/1 ratio(1 part water), and I am using millet or rye.

When I do rye, I put enough rye so that it a little less than half full. Then I fill water so that it is just barely above the rye. Seems to work perfectly. Shake after PCing.

Real easy way to do it and no measuring required.

One thing though. If you fill it to half way you will not be able to shake the jars. So to prevent this make sure you put less than half. The less you put in the bigger the space to shake. It is all up to your preferences.

You make your own? If so I would say do the same sort of thing. Just make sure you think about how much to put in. You can use the corner of the bag to see how much water is enough. Meaning have it so your rye is sitting in the corner of the bag, and then fill with water to the necessary level.

Make sure that when you sterilize your jars that you wrap the tops with foil.
