The 'general' rule is ; if there on the tight side(too dry, keep lid tight) If on the 'loose' side(too wet, keep lid loose) this depends on race? Just keep a handle on it..RockOn!

there is enough air in jars to support growth for most of the process but some stall near the finish and air must be exchanged.
grain jars aren't as full and don't need holes.

i highly doubt you'd get a contam. by 'open' you mean loosening the lids right? that's okay, i do it for the entire incubation cycle (after I have visual confirmation of the mycelium germination). I wouldn't take the lid off to check them or anything though. Do note that I use a layer of dry vermiculite (ala PF tek), so even with loose jar lids, if contams did get in, they'd have a lot of difficulty getting through to the substrate.

However, of a side note, I accidentally 'birthed' a cake once (incubating upside-down with loose lid), and the cake slid out of the jar. I just put it back in quickly and pretended it never happened.... no contams so....
