Kind of Blue by Miles Davis was recommended to me when I asked this same question a couple years ago.

Best selling jazz record of all time.  For a reason.

Thanks for the recommendations everybody!

So far The Kilimanjaro Darkjazz Ensemble really caught my ear... I find it's a little more accessible for me to get into, but I'll be sure to listen to everything

Miles Davis is amazing.  Him + Coltrane, the best shit ever.

Way better than Kind of Blue IMO is Relaxin' with the Miles Davis Quintet.  Absolutely unreal.  I Could Write a Book off that album is probably my favourite jazz song of all time.

Yeah its pretty good. Guthrie Govan is very accessible, you should really check that out. If your taste is anything like mine you'll like it better than anything in this topic.

Birth of the Cool - Miles Davis

why has no one mentioned this one already?

I've seen so  many people get hooked on jazz with this one album...

psychedelic jazz would be the perfect way to describe it

Check out Ben Webster (tenor sax), he's been my idol forever (i've been playing sax for a many years) he's got a real mellow style that I adore
Also Sonny Stitt is sweet
Thelonius Monk rules
Dizzy Gillespie
Big Band tunes are fun
Etta James
And the other folks that people posted are good tunes
enjoy

Figured I'd bump this and point out that the band "Free the Robots" is beyond awesome.

For Coltrane, Hanock and Davis, what are the most grooving, but not extremely old works of theirs? I downloaded Hancock's "Sextant" and while its awesome I do feel its a bit over my head. I find trouble keeping entertained by a lot of the ambiance in the first track. The end of "Rain Dance" is so whacked out though it makes my brain feel like its on fire.

I'd really like to get into some of this stuff though Jazz is great to read too and walk around too.

Man Herbie has so much amazing shit.  Head Hunters is a classic funk album with a very well known tune, Chameleon, on it.  You'll almost certainly recognize it.

He also has a ton of more traditional jazz - I'm at work right now, but I'll post up some stuff when I get home.

Mahavishnu Orchestra  - "Birds of Fire" album - fucking ferocious, will blow your head off.

And where we had thought to be alone, we shall be with all the world.
