fruits in jar not 100% collonized

Someone I know started two batches of jars. The jars came from two different vendors on ebay. The first one gave nice white mycylium network in the normal spiral. They dind't have alot of early pins or fruits but they have already fruited a ilttle bit and are starting to pin more now on a second dunk/roll/light/shotgun.
The second ones seemed to have a finner network and also seemed to colonize but in an uneven way. In addition to different pf jars they were also inoculated with different strains.
The 1/2 pint jars are short and wide instead of tall and skinny. The bottom is 100% collonized, however the sides appear to be only 50% on some of them.
However, on just one of the cakes, there are over 10 fruits, between 1/2 and 1" long. Looks ready to take out, however what about the sides?
They have been collonizing for nearly 6 weeks now. THe other cakes were taken out at just over 3 weeks, nice and white (no early pins or fruits however).
Ok so heres things that may have gone 'wrong' with the weird batch 1) no incubator (ran out of room, so they were left them room temperature between 60-70 degrees)
2) maybe shaked to early? I am w0ondering if the sides that arn't colonized could just be verm from the top that got shaken around..?
3) Because it was taking so long, the jars were opened some of the jars at around 2-3 weeks so they could 'breath' better. Yeah, this was really stupid . Some of the jars are barely colonized at all and have what looks like cobweb and moisture. No colors, just what looks like either cobweb or mycelium very sparsly networked. (Should these be put in an incubator to see for sure??)
Should the ones that are fruiting be birthed even though they have sides that are brown and nice bottoms, or should they go in the incubator more?

1-60-70F is fine for incubation 2-It could be alot of times the substrate shrinks and dry verm falls down,(would have to see a pic to be sure) 3-You shouldnt have taken the lids off the jars until they are fully colonized and had 7 day consolidation, they could have gotten contamed and thats why its barley making progress

BTW you said your using an incubator, what temp is the incubator kept at, because if you are using an incubator that is above 75f it doesnt take 2-3 weeks to colonize because it grows faster at those temps but so does the chance for contaminants, i bet those jars are contamed

incubator was at 80 degrees for the first batch, but the second batch woudln't fit so they were at room temp. That's why the first batch done so much sooner.
