You need not worry about humidity during the incubation stage unless you are living in an extremely dry area.  The jar locks in the moisture already used in the substrate, and as the mycelium develops, it gives off gases.  Wait to worry about humidity during the fruiting stage

EDIT: Also, you may want to turn your temperature down just a bit, as the mycelium growth raises temperatures in the jars.  This is just me being picky though.

Your temperature is about perfect.

I maintain a high humidity in my incubator to prevent the filtered grain jars from drying out. Contams are controlled with the liberal use of h2o2.

Id lower my  temps to about 80-83, thats just to be on the safe side. Being patient and waiting 3-4 more days is better than having it borderline too warm, and possibly ending up with nothing because of the cakes drying out.  Another thing is when its warmer, the moisture from the jars leave faster, then the air in the incubator can get very moist, making the area more suitable for molds etc....But thats just my opinion.
Just throwing them in there at 85 will probably be fine, let us know if you notice high humidity or mold. :smirk:
