RR, Do i need to have a valve by the steam vent as well, or will the steam vent automatically? I'm building a set-up similar to yours.

I have both.  The automatic steam vent will close at 212F.  If you want to be able to vent some steam for other uses, you'll probably want a bypass valve.  For an extra steam vent if you want convection, just go to your local auto parts store and get a brass radiator drain valve.  It will be 1/4".  Most hardware stores also carry them.

So the steam vent vents on temp rather than pressure? I'm not going to vent my steam any where else but I need convection don't I? Also, will the temp while running be lower than 212 degrees?

The automatic steam vent will open back up if the temp drops below 212F/100C and vent steam again.  To be honest, I keep the small bypass valve open all the time to keep a bit of steam flow.  I route this excess 'waste' steam through 80 feet of insulated and waterproofed piping to the concrete slab and walls of my grow area underground, even in summer, because it stores the heat in the ground to be released next winter when I need it.

I did not know the steam vent closed at 212F good thing you recommended having a second hand operated valve.

I think I would like to do the same and have the extra steam vent slightly opened at all times and venting steam for convection.

Will this ball valve work for that purpose and can I slightly open it by only turning the handle a little bit?

One thing I was not sure about was the nickle plated brass hex nipple, I was pretty sure the brass reducer nipple should be ok to use.

Non-hex nipples are less expensive and you can mix brass and iron fittings at will.  If you're using the ball valve, you can save more money by not ordering the steam vent.  Also, instead of the expensive ball valve, you can get a radiator drain valve at your local hardware or auto parts store for $3 that will work. I don't know what they mean by steam trim.

RR, Did your steam convector have a metal strip hanging out of it. I just got mine in and it has a metal strip attached inside the convector, but when i hold it in the proper position, vertical, the metal strip hangs out the threads. Just wanting to make sure this is normal or if i got a faulty convector.

Yea, I just checked my spare(I always order two of everything) and it's got a bimetallic element inside.  It rattles around in there, and hangs out the bottom when held right side up.

This whole thread is epic! I built myself a steamer, but am having trouble with it leaking excessively. The waxed paper method isnt working for me. Anyone have tips? Thanks!!

You hate my setup then. 5 x 55 gallon barrels at 15psi all running at the same time. Cooked like that for years no issue. Pics are shared in my profile.

I have 5. The all cook at 15psi concurrently. Safety blowoff valves at 18psi
