dont pull this thread this question cannot be answered on the site

I need to heat jars to 15psi and have 2 cookers that have nothing on them to tell what 15psi is I know its about 250 but how the hell do I figure out what to do  with a pressur cooker that doesnt say shit

I know one of the guides says go to 15 psi slowly over 15 minutes and then pressure cook for 45minutes

please somone help me figure out how to do this  :confused:  :frown:
with the shitty cookers I have  :confused:

Sounds like you have a Pc with fixed pressure gauge. These are somtimes less than 15 psi- in fact 12 psi is common. no need to worry, if this is the case many here report that a fixed 12 psi PC will do the job. If you follow the guidlines for the 15 psi, your most likely ok- however others here have diferent views.

1 psi works (at ~1hr) that's called boiling/steaming, it is what your doing when you don't have a PC. would still be a good idea to determine what psi your cooking at so you can guage how long to cook, don't want to carmelize.

Every pressure cooker has some kind of a device to limit the pressure.
Be it a rocker or a spring system.
Read the manual.

I use a 10psi pressure cooker with birdseed. It has always worked for me. I just cook them for about 1 hour 15 minutes.

that's right, that was kinda my point. just a simple boiling (1psi) works. upping the psi just decreases sterilization time by an inversely proportional ratio.

But using a pressure cooker also seems to work a bit better. When I use to boil I had jars contaminate more often. As soon as I went to PCing I have had a lot less contams.

I agree, and have experienced similar results. The PC produces much more "active" steam and seems to get in all those little crevices. It also generates higher temperatures so maybe some contams are more temp resistant? Or maybe the overall temperature of the jars is more evenly distributed (no hotter or cooler spots/pockets caused by temperature wicking into the air during a boil) therefore eliminating all possibility of contam survival. No doubt PC's are better, just saying that 15psi is not mandatory.

I agree that PC's work better, however I think that the PF TEK guidline for how long to pressure cook is too little of time. (unless they have updated it after all of these years)
