Good or bad jars?

This was my second run at a pressure cooker sterilization and it had been a while since I had gone at it. They are BRF/Verm PF tek jars.
Anyways I filled my 23 quart presto to the minimum water line which was 3 quarts.
The bottom row of jars had alot of water forming on the lids and looked as though they had taken in water during PC.
I used the top level of jars even though the dry verm layer looked like some of it fell on the sides of the cake on the top.
Out of the jars I tossed I noticed the verm layer was dry on all but one of them and the cake had just shrunk dramaticly thus bringing the verm layer down with it and some fall to the sides.
How do you think the jars I used will fair?
Here is a pic of one of the jars I used.

yeah a square of aluminum foil will to wonders to stop water from getting into those holes and messing with your moisture content

Yes I did have foil and thought I had put it on preety good... not sure how water got in.. but like I said the verm layer was dry on all the bottom jars I tossed except one. So im hoping the top jars I used will be ok...

probably from to much water in the pc... water should only go like an inch and a half up the sides of the jars. put a rack in the bottom of the PC to lift the jars higher if need be

I did use foil and like I said in my previous post I thought I put it on very good. However out of the lower layer of jars I tossed because I found water on the lid and thought they took on water. Thats as high as it went. I put the water at what the PC manual said was minimum level.

Anyone got any input if my jars will be OK? Why did the cakes shrink during pressure cooking?

I had a similar problem. Even though I put less than an inch up the side of the jar of water in the pc, the jars are so short the water boils its way under. The whole environment inside is steam too. I tape my holes while pcing, foil and get the jars higher. I put flat lids or rings on bottom, a water weighted bowl then the rack. I opened fresh pced jars and the cake was shrunk too, I suspect they all do. Good Luck
