I would count on it being two months from start to finish. It could take as little as less than a month, but it could also take way longer. A month and half is average I think, but I'd say two just to be safe.

Sounds about right, generally at the 45 day mark.

Where you live?
If you can find a home hardware they usually carry it.

Micropore tape, polyfil, tyvek and a drill will make your jars almost impenetrable by contams.

Are there any methods where I can simply throw the jars in a rubbermaid container and throw them in the closet for a month.. or must i have a light bulb and clear container? Also how do i control the humidity so i can keep it high?

Polyfil OR tyvek, don't really need both. And I recommend polyfil, for most jars most of the time.
-------------------- You make it all possible. Doesn't it feel good?

I am in the process of my second PF Tek and just thought I'd share some things I've learned. The good PF teks out there already have a complete list of supplies for you.
For perlite, don't get the Miracle-Grow stuff that you find at Wal-Mart or Home Depot. I couldn't see through the bag to know that it was brown and had crap added to it to make it more nutritional for plants. I ordered my first bags of perlite and vermiculite on Amazon because I couldn't find it locally. That's an easy way to do it, but you pay too much for shipping on large bags. Check out the local, independently run garden places instead of large chains. I found my 4 cubic foot bags of perlite and vermiculite for about $18.
Second, go ahead and invest in a pressure cooker. They aren't that expensive and if you want to move on to more advanced methods, you'll need one.
Third, a glove box is not 100% necessary, though I'm sure others will disagree. I have a small room that I can easily disinfect and I have had no contaminants at all with 12 PF style jars.
Then, be sure to pick up some extra 10mL syringes and needles so that you can make your own spore syringes from your mushrooms. Liquid cultures are also pretty simple; I would look into those.
For a good FC, I suggest the Shotgun Fruiting Chamber
The PF Tek I wish I would have followed the first time: Shea25's PF Tek During my first grow, I used a bad tek and the jars took almost 1.5 months to fully colonize. I am now using Shea's and the jars were inoculated on Jan. 29 and all of them are 80-95% colonized.
Hope that helps.

No I don't have a grow journal. I would make one but I've already done most of the initial steps. Use the search box, there's dozens of good ones out there already.
I do have some pics of my PF cakes while they're pinning:

And now while they're in the shotgun fruiting chamber shown in that link, but no fruits yet :
