How often a day do you have to do this?

And what exactly do they mean by fanning?

I mist and fan around 5-6 times a day if I had to guess, depends how fast the casing layer is drying out. You could just use a piece of paper or cardboard to fan it. Gotta keep your casing layer nice and moist but without any standing water.

It's typically not a good idea to use an actual fan to constantly fan your cakes or casings because they will dry out much to fast that way.

I used to always just use the lid. Haha just like wave it up and down over the top of the container.
