My first hand at sweetbreads

So, I've had them a few times before but I've never prepared them myself before.  I'm using the recipe from here:

So I bought veal sweetbreads, and they came in a pillow pack.  I took them out and soaked in water overnight.


Here's the simmering liquid.  Brought to a boil, simmered for 30 minutes, and then remove all vegetation before adding the sweetbreads.




I was very concerned about overcooking.  The recipe says 10 minutes, but Fergus Henderson's Nose to Tail Eating said 2.5 minutes.  I only simmered it 5 for fear of overcooking, but I think a 10 minute simmer should be fine for next time.


Peeling these were a little more difficult than I had thought it would be.

I picked up some golden beets, and just boiled it.  It took like 40 minutes to cook, but it was also a fairly large beet.


Instead of molasses sauce, I wanted something a little more colorful and made a blood orange gastrique instead.

1/4 cup rice wine vinegar
1/2 cup sugar
1 blood orange juiced
Reduce to a syrup.




I think for next time I'll cut the beets smaller and won't drizzle the gastrique on the sweetbreads.  It was a lot of sweetbreads for just one person, so I'm saving the rest to deep fry for tomorrow.

Yeah, just put salt and pepper, dredged in flour, and pan fried.

This reminds me of organ meat week at culinary school.  How did the reduction turn out?  1/4 of rice wine vinegar seems like a lot of acid there.  Next up you should do kidneys, they are imo, about as good as organ meats get, which isn't saying a lot but still.  :crazy:

Well, I accidentally juiced 2 blood oranges instead of one.  I thought it turned out well.  The blood oranges were also on the sweeter side.

I'm going to try to find some kidneys.  It was a huge pain in the ass to get these sweetbreads, and I think I'll have to scour some ethnic markets.  Any ideas for preparation?  I have very little knowledge when it comes to cooking offal.

Sounds delicious, I might actually try and find some of these this weekend.  Did you brown them at all?  The color is offensive to my eyes, but Im sure a nice browning would make them delicious looking, not to mention complexity of flavor.  Of course Ive never worked with sweetbreads.

I pan fried them for the dish, but I didn't get the oil hot enough.  I'll know for next time and try to get a little more color on it.  If I cooked it any longer than I had, it probably would have been overcooked.
