Not sure.  Try it out and see.  Worst comes to worst, you waste some bulk substrate.  Best case, you find out how old is too old.  How old are we talking?

I just used over 3 months old corn that I forgot to room temp when I moved my jars to another place. It fruited super fast after casing! Faster than other casings I made at the same time. I was suprised.

I've actually heard that "aged mycelium" as some call it is a lot more potent than younger mycelium, because you've given it a chance to take care of all of it's primary biological functions and it's started it's secondary ones such as producing psilocybin/cin.

I left an uncooked WBS jar just sit for a week. When i came back It had gained intelligence and declared civil war on the bottom half of its self. then i saw a mini nuke and that was the end of that jar.

Depends how you stored it

Room temp?
Fridge?
Freezer?

Never done WBS myself - but I have extensive experience with letting rye jars sit for way too long... The worst mistake I ever made was to assume that once I shook the jars a few times the myc would stop clinging to itself with such ferocity, and that I could easily break it apart with a spoon or something to spawn it to bulk sub... That is not correct! Letting the jars sit too long can make a virtually impenetrable mass of glue-like myc that is impossible to get out of the jar... Eventually I ended up breaking all the jars away and grinding it up in my hands (which was still very difficult) and I ended up with painful glass shards in my hands (they go right through gloves)... Now I use bags for everything except first gen g2g...

As far as the virility of said neglected jars... I would posit that the ability of the myc to colonize bulk sub does degrade with the age of the culture, aforementioned extraction difficulties aside- the longer the jars sit the more dehydrated they get; however exactly how much they degrade - I cannot say; maybe someone more experienced in the myc life cycle can weigh in... The best advice I can give you is to time your different phases of the grow as to allow minimal time between them!

Hope this helps!

If a substrate is fully colonized, the mushroom will try to develop pins sooner or later. After it started, it won't colonize much of a bulk substrate anymore.
It sure happens, that they don't do it, and the mycelium just vanishes, because it dried out, or the whole thing turns into goo, because of bacteria in the jar.

As Libertaire already said, you should see for yourself if it works or not.

Good luck with it:thumbup:

Well I spawned it last night to coir in a tray.

And I used a shit load of spawn so hopefully that will speed things up.

I'll check on it in a week or so and I'll post some pics of the results
