Stalling...? need some input

So I have a Monotube, Coir/Verm/spent Coffee that i enoculated 3 weeks ago as of today.. it hasn't contaminated yet, and is still groing just kinda on the slow side.. it hasn't overgrown the entire top yet.. a week ago i did another monotube and this time mixed in straw, the grain i used was way old and it's almost done.. i'm watching it kicking the other tubes ass.... so any ideas as to whats causing this slow growth... should I fan and make it fruit, their is enough mycelium on the surface, just not covered entirly..
The other question was i've been having so many problems with my jars stalling, that i gave up on spores to LC to grain and knocked up 2 mother jars with 2.5 cc's of PF classic.. the growth was slow to start and took off, after about a week and a half i shook it up. it's recovered and growing, but i'm worried about stalling and want to know if i should be worried that condensation keeps forming on one side of the jar till I move it a quarter turn?

This can be the result of many reasons. Wrong moisture content, slow colonizing genetics. Maybe even contams. Wait a little longer for the whole substrate to be colonized. Uncolonized substrate will probably result in contams.

When your jars stall that often you should think about either unsterile teks and bacterial infection, causing the jars to stall, because of the natural barrier they're running against, or -again- the wrong moisture content. It's most likely not the spores fault. Condensation can cause a lack of moisture in the substrate, as well as water pools that you don't want. It is, however pretty normal, and as long as it's not too much, you should be fine.

what can i do to get ride of the moisture in the jars? and if in another week the coir is still not completly covered but no sign of contame? Do you think maybe letting the coir dry a bit would help speed things up a bit, doesn't coir grow slow if it's too wet?

What temps are your jars in? The inside of the jar is more or less always a bit warmer than the outside, because the mycelium creates heat. So condensation normal.
Concerning your tub, you should probably wait one or two days and see if it colonizes at all. If your substrate is too wet, this could cause slow colonization. If it doesn't colonize at all and you're under the impression it's too wet, let it dry out little bit and see what happens. If it still doesn't colonize any further, put it fruiting conditions.

I dont think you can do anything about the moisture in your jars, thats something that you really only get one shot at before you knock them up. RR does a test in his videos, where he puts his grain that hes about to PC on toilet paper. If theres any wet spots on the paper than that means its too wet, so maybe thatll help you judge better in the future.
Ive never worked with coir so I cant tell you firsthand about its moisture content, but myc doesnt always colonize quickly, especially when your working with multispore. Id give it the time it needs, just seal it up in your closet and try to forget about it for atleast a week, youve got your other mono to play with anyway right?
