I've heard from a fellow grower that Pans are more prone to oxidation than cubes? Is this so? He also said they were more potent fresh than dry.

I've been told that fresh mushies are always more potent that dry....anyways,
I would put my mushies in a baggie, put an O2 absorber in the baggie and put the baggie of mushies in a mason jar, and put an O2 absorber in the jar.
It's very unlikely mush O2 will get to your mushies.
While they are still fresh? I've done that with fresh chitwan cubes, they turned crazy dark blue after I put them in a jar with two oxygen absorbers for a couple of days.

I grew some pans awhile back the one in my avatar. I stored them in a 1/2 pint mason jar in a cupboard for 2+ months with zero potency loss. I used a dehydrator(with heat) to dry them

Pans, just as Cubes, contain a lot of oxygen reactive Psilocin and when in contact with they lose their potency rather fast (compared to species such as Psilocybe azurescens for example).
What you want to do in order to save as much potency as possible is to reduce the time they're in contact with air.
The most important part is to seal them as air tight as you can. A vacuum sealer would be perfect. A storage in the fridge or the freezer is advised as well, since warm temperatures speed up the oxidation process.
