if someone were to start a online vending site how would they receive their payments and keep anonymous or as close as possible??

just email other mail order sites and see what they do. usually they only accept cash, or USPS international money order with the pay-to name blank. never accept western union, or moneygrams they are the DEA payment of choice because they can prove you are receiving money.
accepting cash is a bad idea, because it can get stolen/lost and then your customers will post to every board on earth claiming you're a scammer. also if your PO box get's raided (like budbuddy.biz had his raided) they will seize all the cash. if you receive USPS money orders, make sure you cash it first before sending due to millions of Nigerian scammers mailing out fake money orders. cash at a money mart, or post office. banks tend to hang on to it for weeks.
when somebody mails you payment to your PO box or virtual office, make sure there's nothing in the letter to identify they are purchasing seeds, spores, weed whatever. Just a blank money order and preferably an order #. All other communication between you and the customer should be encrypted.

MOM's typically switch up their PO boxes for receiving money because if you are suddenly receiving a ton of international mail customs will hold it (not open it, but they delay)
***Protip: If customers don't use the hushmail 'java applet', then all encryption is done server side and can be viewed by anybody with a court order. Many MOM's are currently looking for alternatives (Adam Flowers, the biggest EU mail order is migrating to a new encryption method Feb)

e-gold was pretty good as well. I haven't used it for a couple years maybe something has changed. When i used it, it didn't require any info that couldn't be easily faked (required zero documents.) The biggest risk was picking up the money at a local bank, but I had clean looking girls that didn't know anything about me do this part. I used to have fun with it sometimes and use silly names. I got a huge WTF from this one girl that picked up money under the name "Sharon Needles"

both egold and ebuillion got busted by the feds for money laundering. egold you could make an account in about 10 seconds with any info you want, and be ready to receive and send money.
there's lots of Virtual Visa Companies around where you can just get the numbers. Entropay is pretty awesome but doesn't allow US residents to register because it's illegal for some reason.
however there's plenty of forums around of people re-selling virtual visas for anybody to purchase like the ebay stealth forums based in the UK

Why would you suggest using hushmail? They got threatened by the feds and rolled on all their customers. Apparently they were also cheating whatever encryption system they were using since they shouldn't have had any of the keys or passwords anyways.
