Maintaining constant temperature at pasteurization?

Hi there! How can the temperature can be kept at constant 160-170 F while doing pasteurization? Thanks.

by using a candy thermometer and watching the stove as the temp rises. you will get to know your stove after awhile...if you do this enough.
I know where to set my stove for both of my pressure cookers and my pasturizing poo pot.

You say that a certain heat of stove will mentain a constant temperature?? I was thinking that temperature is just getting higher slower. Maybe if I turn the stove off sometime will be good to keep the temperature constant. Was it 160 or 170F?  Thanks for the advice. (the decks still didn't arrive)

No I will use an example. When I use my small pressure cooker... I have the stove set to one setting lower than high on the dial. After I get 15 psi on the gauge I turn the heat down on the dial to one setting higher than inbetween low and medium.
So I'm trying to tell you that you have to learn where to dial your stove in to get certain temps and then where to turn it after you have reached that temp to mantain that temp.
By using a Candy thermometer it will help you learn where to dial your stove in to get the temp that you need.
I hope you get your boards soon...I'll try and check on the shipping Monday.
