Mycelium 48 hours apart

I spotted mycelium in two jars, 5 and 7 days after they were innoculated.
I used Alien's formula for one batch (7 days), and altered it for the second (5 days).
There are minor differences to the substrate, they are as follows: I reversed the Rye and Rice ratio, exactly. Thus, rye is whole at 3/4c volume and rice is ground at 1/8c volume. I added a knife tip of hydrated lime.
What would most likely account for the 48h difference? hydrated lime, or the swapping of rice and rye?

the diffetence between 5 and 7 days??? dude, grow another plant.. nature does what she wants.... NOTHING is the difference between 5 and 7 days....

Anyone else? Conditions are the same for every jar, unlike nature.
I was told I was stupid for adding hydrated lime. A jar with hydrated lime colonized 2 days faster then jars without.
I suppose the flaw in my "experiment" is with more then one altered variable.
