Milk has been used successfully on a fungus which attacks grapes. I think when you are using for it dunking it would help against contams getting established and the mycellium network is strong enough to resist any (possible) detrimental effects.

I'm not sure, but there are quite a few different fungi in the world and some may be more suseptible to the fungicidal actions of milk than others. Apparently, based on the experiences of numerous posters to the shroomery, cubensis are not harmed very much or at all by milk. When doing a milk dunk with a cake, you're also dealing with a well established mycellium network which also may have something to do with it. The articles I read about milk being used as a fungicide, also mentioned baking soda being used for the same fungus with success - but this was a fungus that attacks grapes.

one should only milk dunk under refridgeration, using non-fat powdered milk [re-constituted], followed by a good rinse/bleach-water dip.

I think all of you are right. But I'm not saying that milk is or isn't a fungicide but certainly it must be creating an environment suitable for the growth of bacteria and not fungus when "grapes" are treated with milk. And there are bacteria in milk anyway that is why it is pasteurized. I like you all's thinking though. Mushrooms grow in cow crap for God's sake. I believe that other fungus, rather than bacteria, is more of a problem especially with fully established mycelia.
