Oregon white truffles

Are fucking amazing! Recently got a hold of some. I 've always had European truffles. While these aren't as pungent as the European varieties , they are good as hell! I 1st cloned one of the freshest ones. The rest are going to my belly.
So far i have made lots of truffle butter, truffle cream cheese, truffle grape seed oil and a fat truffle dinner! Today im going to put some in sea salt and cook the rest of what i have. I have lots of pictures i will try to get up soon and explain how i made it.

Here's some butter i made . I got the butter soft , whisked in bits of truffle , added salt and put into an icecube tray. Then wrapped each in foil.

Heres the grape seed oil. I chopped up the truffles, put into a mason jar. Added the grape seed oil ( used because less flavor then O.oil), covered with foil. I then put it into a pot of water . I pasteurized it at 160 for 90 minutes. I did this to get a longer shelf life and not have to worry about botulism or some other nasty shit.

Here dinner. Big fat wood grilled porterhouse , topped with sauted mushrooms and truffle butter. The beans are steamedand tossed with sauted onions and truffle butter. Then truffle mashed. All this was topped with a couple truffle shaved for each plate. ALso deviled eggs mixed with truffle and topped with truffle.

Very nice to see they arrived in good condition. I hope there werent too many unripe ones. Great idea with the butter cubes.

Some were unripe, but still fucking good. Im letting the rest sit in the fridge a few more days. I think they are getting close, i can smell them when i open the fridge. Every now and then i sniff the box like a fiend. They are from washington state. Not sure of the price, i saw some on ebay.

JEALOUS!!!!I have yet to have the pleasure of eatong fresh truffle. Aside from a truffle reduction on filet mignon I had at the Eifel Tower in vegas, I've only had store bough oils and salt. I can't afford the real thing Some day. Truffles are like CRACK.
