rotting smell from mexicana

FOAF asked me to post this question:
4th or 5th attempt now, first time on rye berries (used to use WBS), a few weeks after innoc w/ a wedge, a rotting smell develops, as if the grains are fermenting or something and have to be thrown out.
he has always kept foil on all jars, lids w/ tyvek, and thinks lack of FAE is the culprit.
has now loosened and partially removed foil hoping to save a few. half the batch was shaken and looks fully colonized, and half have been left and are still working on their food.
any experiences, opinions or suggestions as to other things to try?

That sounds like bacteria, a sweet but sour smell.
I think it made it in through wet tyvek filters, which happened because keeping the foil on the jar prevented normal gas exchange and condensation wet the filter making it more permeable to bacteria. Toss anything that doesn't recover from shaking or smells bad even through the filter.
Next time take the foil off after the jars are allowed to cool down in the pressure cooker. There is no more need to keep the foil on after this.
Also, how are you transferring the wedges and how long do you pc for?

No not vinegar, like wygram says, a sweet but sour smell. at this point it is still faint, but i recognize it from previous attempts.
the thing is, this has now happened on 2 different grains... same smell, and only on mex. same procedures are used for cubs no problems.
Yeah, i suspected a lack of gas exchange might be the cause...
All his cub jars have foil on them during incubation and no problems. I suppose the mex just needs more FAE...
PC time is 90 mins. (sometimes 60...)
agar wedges are transferred as usual. no flow hood, or glove box, but don't really have problems this way so i dont think that this is the culprit.
will advise him to try again without the foil covers. he has already taken them off on the running batch hoping to save a few.
any other?
