Different shades of white, ranging from a bright white for some strains to almost a yellow color. I've seen some blueing on spent cakes that looks more grey than blue, but I don't think that's your problem.

What 2 strains?

Different species have different color mycelium for certain, but different races within the same species tend to be pretty much the same color if everything else is the same. The color can change quite a bit, ranging from a yellowish to a blueish hue depending upon the environment.

The look of the mycelium can easily change even from a single growth from fuzzy to ropey. This is very obvious on a 2d agar surface, but can look odd on a 3d vermiculite or rye berry surface. The fuzzy growth will look very white while the ropey growth will/can look almost dull grey.

After waiting for a few weeks before birthing, my cakes always begin to turn gray, which isn't a good sign, so now I just birth them a few days after full colonization.
