I want to start casing with sphagnum peat moss. I plan on using the standard 50/50 mix. I have read all the info and their is alot of controversy on the question of sterilization. should I sterilize the 50/50 mix? Also has anyone had good results trying chex as a nutrient for the cakes?

what i do with good results is put the 50/50+ (with water) into a pyrex dish, cover with foil and bake at 350 for 1 hour. don't know if it's necessary, but i have good luck this way.

My friend pressure cooks her sphagnum peat moss for 45 mins at 15 psi. She has had great success with this method.

ive never cased, but from what ive read, you should spray some disinfectant around, and that should be good.

the real answer is here. you put growing maturing mycelium in this casing. any contams would have to start a life cycle, so the mycelium will spread before contams can.

I would add some calcium carbonate to the mix to balance the pH. I had to go to a homebrew store to find it, but it has been worth the effort.

you should cook it for an hour.

Try casing with coir and oyster shell. A much simpler mix and it is very easy to tell the moisture content by looking at it. It seems very contam resistant also.
