Not bone dry but increasing evaporation from the surface, which speeds up the growth because they think water is running out.

They should be done by new years.

I don't believe that's what happens. Evaporation from the surface is a pinning trigger, but I don't think it will make your mushrooms grow faster.
But just pick them whenever you are ready, they'll be fine.

Yeh after some thinking I decided to just carry on as usual and let it just run its course.

Remember that past a certain point it's all water weight anyway. They might look weird but work fine.

Mist as required.  Evaporation of moisture is a pinning trigger, but won't speed up growth.  The fruits should double in size every 24 hours.  It looks like you'll have enough to pick for new years.

I think the casing layer had a ph that was a little too high.
After testing a sample with my ph meter i just bought it read at 8.5
But the fruits were very healthy and grew very fast. I would say the average weight for each was 2grams dry each.
The tub under neath this one has no casing but has about 5,000,001 pins.
I think I can expect about 40-45 grams from this.

I'll probably post some pics later of my Koh Samui pins.
It would be awesome if they all grew.
