growths on my cakes. anything to worry about?

they look perfectly healthy, white and they are rhyzomorphic.
but i just dont understand why my cakes put more of their resources into growing these weird white mounds rather than creating mushrooms. the cakes are also pinning on all sides. on some cakes i have more pins coming out of the bottoms than the tops and sides. and I did not flip them. they are still in the poskition they were in when they were in jars.
is it bad genetics? not enough air exchange? or is it a contam (it doesnt really look like it, as the growths are rhyzomorphic. when i pull them off the base of the growth, the torn material comes apart in strands like regular mycelium.)
also, i've been pulling the growths off. should i let them stay? mainly i pull them off because they look gross. they accumulate water in them and in close proximity, so it kinda takes on a "million little eyes" look. like a spiders eyes. its a particular type of phobia but i cant remember what its called now. ugh. gives me chills.
heres some pics:

yeah. the shrooms seem to be okay, and their fairly potent. but they are very mutated looking. stuff like half formaed caps. gills on top, stuff like that.
