Another wbs frustration...

So after rinsing well and a 30 hour soak (with brewed coffee and gypsum added to the mix) I rinsed until the water ran clear and then simmered for 15 mins and drained, tossing occasionally to steam. I'd like to add that after the simmer the water was very brown- probably from the coffee cooking off- but I did not rinse after the simmer. The steam didn't dry it enough though, and by the time it was cool, it still had a lot of surface moisture (although, switching from my last attempt to a corn-less mixture did dramatically reduce the starchy stickiness). I was thinking next time I'll try tossing it constantly until cool. Anyhow, I set a couple colanders in front of an osculating heat-fan and unintentionally fell asleep, leaving them to sit for 6 hours of so. When I woke up, I thought they were almost too dry, but I jarred them hopefully and PC'd- but only for a half hour before I was interrupted and was unable to continue. I opened the PC today to find the contents of every jar were clumped as a whole to the bottom- it took a couple slaps on the side to knock it loose, and it left a thick layer of moisture in the jar. It all smelled bad too- the inside of the cooker, the inside of the jars, the left over water in the cooker-- like a nasty birdseed smell. BTW, the tek I'm using is a mix of RR's, monstermitch, and agar's .. I've just been trying to feel out a good way to get jars going

nasty birdseed smell always happens for me.
You sure you had the right moisture content before PC?
Did you try the metal spoon test? The TP test?

Well, I stirred as often as I thought was needed while it sat in front of the heater before I fell asleep, and it had passed the tp test but still failed with the spoon, so I attributed to uneven moisture- stirring well and fell asleep. It was still sticking to my hand a little when I jarred it, but it does a little on RR's video too, so I figured it was fine, if not almost perfect. I'm a noob though, so "perfect" is strictly a guess.

WBS is like cooking.. you get a feel for it. My procedure is similar to yours, but instead of bringing the whole thing to a simmer, I bring a pot of water, to which I've added some more coffee, gypsum, to a rolling boil. I then pour in the WBS and simmer. Ten minutes or less will do it, and I take grains out and pinch and bite them to see how they're doing. It will vary between bags and brands. WBS that is mostly millet will hydrate faster than those with more milo. I then pour into a strainer and toss quite a bit. When it's cool enough I pick it up with my hands and drop it gradually.

Hm.. Do you pour in the soak water into the boil, or remove it and then pour just the seed? Do you bring it down to a simmer first? Do you have a good success rate doing that? I'd be afraid of bursting the grains just pouring them into a boil. Thanks, maybe I'll try that out.. What do you check for when you bite it? You just want them to be soft or to break apart easy?

I rinse before and after the soak like you and drain. I dump the drained seeds into the boiling water. This will drop the temp considerably. I then bring to a low simmer and stir constantly. I want the seeds still firm but splittable with the thumbnail and finger. Like I said, it's like cooking and gets easier with practice

The easiest way to prepare birdseed is to soak for 20 hours drain the water off and pat dry the WBS with a towel. It works like a charm no need to simmer or do anything. Just make sure you load your jars up right after that so that they dont dry out.

I just soak the Wbs for 24 hours, then rinse and drain and jar up and PC. 90 mins of 15 psi. Works everytime.

as above, I have only once simmered my wbs before and ended up with slimey gunk after pc'ing. Just soaking the seed and not simmering gives me lovely loose grain.
