Always tape holes over PF jars

Made 12 jars last night without tape over the holes and I lost 4 jars b/c water got into the jar.

You don't tape the holes up, you put foil over the lids to prevent water from going inside. Then remove the foil after cooking, no tape especially for pf style cakes. :facepalm:

they have to breath or have gas exchange. unless you use micropore tape

Yeah, use foil. You can save the foil covers and reuse em.

Tape becomes a pain to clean off.

I used foil. The tape is only used to protect the jar while in the PC. After the PC the tape is broken when inoculating with a syringe. I use a dry verm layer as a filter for the PF jars.

Next time, make sure the jars are totally out of the water.  It's the steam that sterilizes, and it won't get your substrate wet.

If u use tyvek as a filter u don't need to bother placing foil on the lids. Tyvek is impermeable so, use foil when preparing PF Tek jars, if you're preparing grain jars, there's no need. I never had a problem.

By impermeable i meant that gas can pass thru, but water can't.
