you never want your substrate to dry out.
if there is excess water on the top, then pour it off or dab it off with a paper towel.
if the substrate surface is dry, then you fucked up, but continuing to let it be dry is just going to drive the nail in the coffin.
get your humidity up however you feel you need to do this. you obviously tried to micromanage everything you did using the conflicting advice of the ~300 posts in this thread and it did not serve you well.
fresh air. 90%+ relative humidity, and light. this is what mushrooms need to grow. give it to them.

ive been told time and time again that your supposed to let the surface dry then mist and to keep doing this process over and over as constant evaporation is a pinning trigger. however i dont see that doing this will solve my problem since my substrate is saturated in the center, way to wet. are you getting what im saying?

no, its not.
how are you coming to this conclusion? the fact that your substrate seems heavy?
if it was "saturated" there would be standing water on the bottom and sides and top of your substrate, and it could easily be poured out.
your humidity is too low. fix it!

just outta curiosity, for my next project, if i rigged a cool mist to all my monotubs and kept the polyfil in all holes, that would be ideal right, because a cool mist provides fresh air and humididy?

well i turned the fan off so theres no freash air wisping in and out of the tubs so that should bring the RH up.

sometimes not enough humidity.
i use an ultrasonic mister hooked up to a blower.
works great on a 3 hour off/ 15 minute on cycle.
  
just rig up something a little smaller, and dial it in right.
it wont cost you more than 50 bucks if you do it right the first time.

I don't think it will dry out as quick now that the fan is gone. You never want the surface to dry out all the way, but fluctuations in moisture content are inevitable.
Humidity around 80-85% is actually good for pin formation. With your sub that wet, I don't see how humidity is a problem, unless the fan was killing it. Like I said, my holes are open and I still have above 90% humidity.
Unless your room humidity is non-existent, which it very well could be, you don't need a humidifier. The humidity here is 50%.

shit that is some bad ass humidifier system you got there. you have an instructional cause i would just follow what you did exactly? i have a squirrel cage blower allready.

what makes OP think this?
i dont get it. if the surface is dry, then the sub is probably drying out too. if it feels heavy, have you checked under the bag to see if there is water pooling?
after 3-4 flushes, (or 3-4 weeks) i generally have an inch or two of water sitting on the bottom of my tubs from the condensation running down the sides.

well i just stuck my hand under the garbage bags and there is no water at all pooling at the bottom whatsoever.
im also assuming its to wet because of the constant myc piss that forms towards the center. i was told underlying water in the center of your sub is a breeding ground for bacteria. i attributed the myc piss to that.

well, i promise you that your substrate isn't waterlogged. you have a humidity deficiency. nothing really too complicated about this, just fix it.

on a side note, one of the mushrooms that was growing was really really short but the cap was pretty much fat and developed and the veil or w/e its called broke off so i picked it. any chance i'll get any effects from eating a non-dried small mushie?

ok this is where, to me, the mycelium is almost dry on top. it looks more wet than it is because of the hyphal knots i think.
