The top layer of dry verm is required.  That's the filter that stops contaminant spores from reaching the moist rice flour below.  The tape is optional. We show the tape over holes in the DVD, to demonstrate going the extra mile.  If you're in an area with a very high contaminant spore load, use it.  If not, skip it.

Gypsum is probably the biggest single improvement to the tek, providing a substantial boost in production.  I use a tablespoon for five jars, but a teaspoon per jar should be fine too, although I'm not sure there's much benefit from the extra amount.
