You have shitty timing LOL. If you have no signs of pinning yet in that one jar, you might get away with putting it in the fridge. Some strains will tolerate this quite well. Just make sure that it won't freeze. That is the only thing that I can think of.

i'd birth 1 or 2 and leave 1 or 2. That way you can try both options, and in case this ever happened again, you'd know which to go with.

Just leave them until you get back. I have had jars that were "pinning like hell in vitro" before and you know what happened when I birthed them? I got a HUGE flush. More that the other cakes that were birthed 2 weeks before. Trust me, if it's only a week, they will be fine.
