Spawn Drying out....

Ok I'm sorry if this is an easy one but I can't seem to find the answer to my problem. I am using Pint mason jars with poly-fill filters stuffed in a small philips sized hole for vent. Filled with pre-cooked rye w/ gypsom. The jars are sterilized for an hour with pressure cooker. Then shaken really good to loosen and remix the kernals. They all look nice and moist and eavenly distributed. I'm trying mexicana A+. I've submersed these jars in thermistat controled fish tank heater water at an even 80f. They germinate fast and run aggresively. But not fast enouph. By the time it is half run through the upper grain looses most of it's surface moisture ,and much more I've assumed, because that is where the mycelium really slow there growth and density or stop all together. How do I stop this from happening. I thought it was the size of my filter hole, which I've shrunk to where it is now but still no luck>????? thank you for you replies..

I`ve seen this before with gypsum and other lime additions to substrate.
I would suggest rather trying to figure out a good moisture level for rye and only using rye without the gypsum.
