Hey, so i did the following. soaked for 24 hours, then simmered for about 30 mins, allowed to dry for about 30 mins, they were 100% dry to the touch, i loaded them in jars, and then pressure cooked for 1 hour. Water did not get in during pressure cooking, they were double wrapped in tin foil and the top of lids arn't wet or anything. So is this too moist or???

Looks way too wet cdnshroom. It will be better to towel dry your corn b4 you place it in the jars for PC'ing. Swim also likes getting the jars out the pc while they are still hot and finds you will have less condensation in y'r jars. It may help to add a table spoon or 2 of vermiculite to the bottom of the jar before spooning in the corn, this will help with excess moisture. If you towel dry the corn b4 pc'ing then the verm layer will not be needed.

I would start again especially if you intend noccing it up with a LC. You may get lucky if you do Grain to Grain inoculation. Click Here for tips and other recipes on corn Prep.

Are they still hot in that picture? they often look much drier when cooled. Also how are you so certain no water got in, the only real way to be sure is to weigh your jars before & after.

yes that is about 2 mins after removing, they do look a little dryer now, i just see no way it could have got it, water wasnt touching jars when i put them in, and steam wouldnt have been able to get in very easy, since they were wrapping in tin foil top to bottom
