It would be interesting to develop a way to fruit cubes directly out of the jar like that.

There's a Dirty Jobs episode, early on, where they were pressure cooking crabs in a gigantic PC you could put a cow in.

I wonder where to get those kind of jars.  The technique (equipment aside) looks like a good idea.  The lids look like they are melted shut somehow, I wonder how the jars get GE during colonization.

I found it odd they used actual glass alcohol lamps for heating a couple steps of the process, it seems like a natural gas bunsen burner would be more economical.

The substrate to fruit ratio seems high, they have the jar depth that looks about 6-8" and the surface area for fruiting is sorta small, but they must have determined that process gives the best yield somehow..

I guess using jars.. a few things happen.. smaller areas affected by contam, reusable, and glass>plastic for sterilization. I guess you also have the advantage of a micro environment for each cluster.. and if your doing thousands of jars.. well, the walls of flushes looked pretty hefty. I also bet it was easier to create automated machinery around jars, as most automated jar filling equipment for food processors is already fitted for the use, and probably re-designed for this purpose.

It looks like they sell the substrate compost as fertilizer afterward, so that probably offsets the cost of inefficient bottle/substrate design.

But still:  My jaw is on the floor.

Would it be possible to fruit a cake like this? By just taking the lid/dry verm layer off and letting it fruit out the top. Would you get more, smaller flushes? Would it work at all?
